Alright I see what you are saying now.
Since you are pulling a scan job from the HP Scan app your problem makes more sense. In the past we have had many issues with this printer model and setting the default scanning profiles for the HP Scan app. Normally when we have a situation where a new setting is not sticking as the default there is corruption in the scanning profiles. I'd assume that making any changes to the scanning profiles at that point do not stick either, atlest they usually dont for us.
What we end up doing is downloading the latest Full Software Solution from http://support.hp.com, uninstall, run scrubbers, reboot, delete the HP folders on the machine and then reinstall. The additional cleanup steps are necessary with this model as the default uninstall leaves behind a lot of junk that interferes with future installs.
You can find the scrubbers under the installation files that come with the full software solution. They should be located under <root install folder>\Util\ccc and are labled as scrubber.exe and UPDScrub.exe. There are also additional uninstall.bat files in this folder which usually are not necessary but could be tried too. Once you scrub and reboot then go out and delete any HP or Hewlett Packard folders under C:\Programs or C:\Programs x86. This area is where the scanning drivers and resources are stored and are important to wipe clean before a new install.
After all that is done then reinstall with the latest update and test your scanning profile again. With any luck the scanning profiles will accept your new customizations and you will be back in business.
