It doesnt really matter which .INF you select, but if you had to pick one I'd go with the one with the most recent timestamp on it.
After you select an .INF the wizard will give you a preview of the options it can detect from it. At that point review and select the driver version that you want and complete the Installation wizard. Repeat the process for x32 and x64 as necessary. If the driver version you want is not posted then try a different .INF from the installation folder until the option you want is available.
If you dont mind could you post for us the driver you are trying to install on your print server? I would assume that you are going for a UPD of one flavor or another.
