Your Server OS may be incompatible with this printer model. The last software update was made back in 2010, I doubt HP is going to take a 2nd look at it as the printer is more than likely End of Life.
You will have to consider purchasing a newer printer model that has the supported scanning software for your new server if you wish to maintain this functionality. This printer does not have an interface to manually type in an email address like many other network MFPs from HP so there will not be a workaround without the scanning software.
